According to Arthur Spiderwick's Field Guide

Is is said that there is only one phoenix alive at one time. That is how rare they are. They live for centuries and then build a nest made of cinnamon, myrrh and spikenard. The phoenix will combust into flames by reflecting the sun off it's feathers and fanning spark with it's wings.  Nine days later a hatchling will emerge from the ashes. The phoenix has purple and gold feathers. They do not eat to live, but have been known to eat the gum of the frankincense tree.
